Caribbean Couscous Salad

  • 1 Box Flavored Couscous (Pine Nut version is preferred)

  • 1 Can Black Eyed Peas (drained)

  • Cup Chopped Celery

  • Cup Chopped White or Red Onion

  • Cup Chopped Red Pepper

  • Cup Chopped Green Pepper

  • Bunch Fresh Cilantro ( stems removed, then chopped)

  • 1/3 Cup Lime Juice

Cook Couscous as directed on box let chill.  Drain and rinse the black eyed peas, and add to the chilled couscous.  Combine all other ingredients.  Chill in refrigerator before serving.

 

[Note from Myrl]:  If I have extra pine nuts on hand, I sometimes add them to this recipe.
