• 1 pound lean ground round
  • 2 tablespoons minced onion
  • 1/4 teaspoon salt
  • 1 teaspoon chili powder
  • 1 can (16 ounces) refried beans
  • 1 can (10 ounces) enchilada sauce
  • 2 cups cheddar cheese shredded
  • 1 can black olives sliced (4 oz.)
  • 1 package 10-inch flour tortillas



In a skillet, brown the ground beef with chopped onion.  Cook until meat is in small pieces, and no longer pink.  Drain any excess fat.  Add the salt and chili powder.

Assemble enchiritos by placing portions of cooked ground beef with onion, refried beans, shredded cheese on tortillas, and rolling like enchiladas.  Place each into a rectangular casserole pan.  It will likely take two pans to contain all 10 enchiritos.

Pour enchilada sauce on top of the enchiritos, and sprinkle more shredded cheese.  Top with sliced olives.

Cover casserole pans with foil, and bake in oven at 350 degrees for 30 minutes.
