Greek Orzo Salad

 

  • 1 Box Orzo Pasta

  • Cup Sun Dried Tomatoes (thinly julienne)

  • 1/3 Cup Crumbled Feta Cheese

  • 1/3 Cup Pine Nuts

  • Cup Diced Red Pepper

  • Cup Diced Green Pepper

  • Cup Craisins (optional)

  • 1 Cup Kalamata Olives  

  • 2 Tablespoon Capers (optional)

  • Balsamic Vinaigrette (as needed)

Cook Orzo Pasta, and let cool.  Combine all ingredients, and keep chilled in refrigerator before serving.
