Pineapple Raisin Cookies

  • 1 Cup Brown Sugar

  • 1/2 Cup Soft Butter or Margarine

  • 1 Egg, Unbeaten

  • 1 Teaspoon, Vanilla

  • 1/2 Cup Raisins

  • 3/4 Cup Crushed Pineapple, Unstrained

  • 2 Cups sifted all-purpose Flour

  • 1 Teaspoon, Baking Powder

  • 1/2 Teaspoon, Baking Soda

  • 1/2 Teaspoon Salt

  • 1/2 Cup Chopped Walnuts - Optional

Beat together Sugar, Butter, Egg and Vanilla till fluffy.  Add Raisins and Pineapple.  Sift in Flour with Baking Powder, Soda and Salt; Mix well.  Stir in Nuts.  Drop by spoon-full 2" apart on greased Cookie Sheets.

Bake at 375 for 12 to 15 minutes or till lightly browned.  Makes about 4 dozen.
